Serve wild styrian mushroom roulade with sourcream lightly warmed with grated parmesan & white pepper. And a beer :-)
Added steaming wild styrian mushroom roulade to a ring of couscous dotted with fresh tomatoes and slivers of garlic:
After simmering for 3 mins, add 1/2 cup of finely ground bread crumbs, stir until sauce thickens
.add the caps, stir, add 2nd half of the glass of white wine, salt, & a tablespoon of palm sugar; cover & simmer
. Add stems & meaty mushroom flesh first, with a half a glass of white wine, simmer for about 2 or 3 mins
Sautee chopped onions, garlic, parsley, borridge & (washed) Stinging Nettles in olive oil w/ white pepper & salt
the subtle colors of wild styrian forest mushrooms can be seen best once they are chopped for the pan.
