1: put mutton/chicken in a pan-> no water,no oil ->2: cover it to be cooked in steam-> light heat (halki aanch)-> it will leave its own water -> 3: add spices (salt+red curshed chillies+black crushed chillies+ zeera+Vinegar to make the meat soft)-> mix well -> 4: cover again to be cooked in steam->meat will absorb all water back along with spices-> 5: now add oil or mutton natural fat (in pushto it is called LUM/LAM don't knw wht u ppl call it)-> mix well-> 6: add tomatoes (equal proportion to mutton quantity)-> mix well-> 7: now add green chillies+ adrak+ green coriander leaves for garnishing-> mix well -> add lemon (if u want)->mix well -> u can add few table spoons of yogurt on top for more taste & garnishing-> 8: cover it for steam-> heat off-> wait for 5minutes for DUM affect (it leaves the oil to surface)-> now ur dish is ready... enjoy :) WARNING: DRINK QAHWA (desi green tea) after having meat unless get ready for heart attack :P #FolkRecipe #CulturalRecipe #Food #mutton #HomeMade #Pushtun
