Here's my review of last night's spinach lasagna. Christopher Kimball of America's Test Kitchen called this the "best lasagna I've ever tasted." http://www.cookscountry.com/recipes/Spinach-and-Tomato-Lasagna-Recipe-Cook-s-Country/31887/ It does highlight the key ingredient, spinach. We found it to be good but bland. It is a wonderful, satisfying meatless dish. I recommend drizzling with a good pesto or adding a zestier cheese, or using as a side dish to Italian sausage, for example. This recipe, as is, left us underwhelmed in the taste department. But again, the goal was to put the spotlight on spinach, which it did.
