Max stack of Undead Essences is......1000! :) You can get 500 essences in 2 hours or less, only if you have Troll SpellSmith. I recommend everyone, and I MEAN EVERYONE, TO NOT DO THE QUEST THAT GIVES 15 ESSENCE IN BATTLEUNDERC!
