IVT: Intestine versus Tripe; Joy Tsin Lau

The garlic came out nicely in the tripe. Little splash of red vinegar, and it was perfect. Soaked in a soy sauce lent some sweetness, I was happy to send the pig intestines on their way to a near existential paradox.
