Gluten Free Zucchini Bread #recipe:
2 c shredded zucchini
4 eggs, beaten
1/2 c coconut oil
1/2 c agave nectar
1/4 c ghee
2 t vanilla
2 c Bob's Red Mill all purpose gluten free baking flour
1/2 c almond meal
1/2 t xanthan gum
1 t salt
1 t cinnamon
1 t baking soda
1 t baking powder
Combine all dry ingredients. Beat eggs separately, add. Add wet ingredients, mix just until combined. Fold in zucchini. Grease a loaf pan with coconut oil. Pour into pan, bake at 350 degrees for about 50 minutes.
To make it a bit sweeter and dairy free, replace ghee with 1/4c more agave nectar. http://twitpic.com/63mfck
