Just absolutely in love with these delicious salty orbs. They've been ridiculously spherical looking like green ping pong balls!! Hand Raked from the Southern Panapui Inlet of Eastern New Zealand, these Rainbow Green Cockle or Tuangi are harvested from a completely remote area situated near the Otago Peninsula. Tuangi are harvested between tides when the sea is just covering the beds. A rake attached to a body harness (think human mule) is pulled through the sand where the clams are deposited into the baskets. This hands on, artisan care ensures minimal damage to the pristine natural environment while at the same time producing an absolutely immaculate product.
